Food Irradiation: Really Safe?

Pérez, Carmen
2008

Like canning and freezing, irradiation is a food processing method that enhances an already safe food supply. It extends the freshness of food, helping to retain its quality and safety.1 The food irradiation is a process whereby food products are subjected to powerful gamma rays from ionizing radiation, such as radioactive cobalt-60. Cobalt-60 is also used in Gamma Knife surgery to remove brain tumors.
